My Grandma passed away at the age of 94. She was a wonderful cook and I was lucky enough to inherit her recipes. Many date back to the 1940s and 50s. Grandma prepared them in a charming country kitchen with no running water and most of her produce came from her garden, not from the grocery store. These are made-from-scratch recipes. I wish I had spent more time with her in the kitchen and . . . I wish I had spent more time with her for so many other reasons.

Salad - Molded Pineapple Salad

1 large can crushed pineapple (reserve juice)
1 pkg lime Jell-o
1 Tbsp sugar
1 - 16 oz carton of small curd cottage cheese
1 cup miniature marshmallows
1/2 cup chopped nuts
1 cup whipped cream

Drain pineapple.  Heat juice to boiling and dissolve Jell-o in juices.  Add sugar and chill until partly thickened.  Fold in pineapple and remaining ingredients.  Turn into mold and chill for several hours.

Serves 8.
